Brown the ground beef with the diced onion on the Blackstone grill over medium high heat until no longer pink & browned.
Stir in the minced garlic and sauté for 1 min until the garlic is aromatic.
In a bowl, mix ketchup, brown sugar & mustard. Top the beef with this mixture. Stir well to combine all the ingredients.
Heat over medium high heat for 2-3 mins. Push the ground beef to a cooler side of the Blackstone grill.
Place tortillas on the Blackstone grill. Add the beef mixture evenly to half the tortilla & top each one with shredded cheeses.
Fold the tortilla in half. Cook until the bottom of the quesadilla is golden brown.
Flip & cook until the opposite side is also golden brown (2-3 more mins) & the cheese is melted.
Remove from the Blackstone Grill. Cut into wedges & serve quesadilla into 4 pieces. Serve warm & enjoy!
