Bacon Wrapped Scallops on the Grill

Ingredients

  • 12 Large Sea Scallops
  • 6 slices Bacon cut in half
  • 1 Tablespoon Butter melted
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Garlic Powder
  • 1 Lemon sliced into wedgies
  • Fresh Parsley chopped for serving

Instructions

  • Soak wooden skewers for at least 30 minutes to prevent them from burning on the grill.
  • Place the scallops, melted butter, salt, pepper and garlic powder in a bowl and gently toss to coat the scallops in the butter and seasoning mixture.
  • Cook the bacon in a large skillet over medium heat for 3-4 minutes per side.  You don’t want the bacon to be crispy, you just want it slightly cooked.
  • Preheat your grill over medium high heat (approximately 425 degrees Fahrenheit).
  • Wrap each of the scallops with a strip of bacon and place them on a wooden skewer.  Place 3 scallops onto each of the skewers so you should have 4 total skewers.
  • Brush the grill grates with oil so that the scallops do not stick while cooking.
  • Then place the skewers on the grill and cook the scallops for 3-4 minutes per side until the scallops are cooked through and the bacon is crispy.
  • Remove from the grill.  Squeeze the lemon wedges on top and top with the fresh parsley.  Then the scallops are ready to serve and enjoy!

Notes

Do not use thick cut bacon as this will require more cook time.  
If the scallops are very large you may need a whole slice of bacon to warp the scallops.  Adjust the number of slices of bacon as needed.  
Refrigerate the leftovers in an airtight container for up to 3-4 days.
