  • Preheat the griddle to medium heat (375–400°F).
  • Cook 1 lb of bacon on the griddle until crispy, then remove, chop, and set aside.
  • Spread 32 oz of frozen French fries in a single layer on the griddle using some of the bacon grease, removing excess grease if needed.
  • Cook the fries for 15–20 minutes, flipping every 3–5 minutes, and season with 1–2 teaspoons of seasoning salt while cooking.
  • Once the fries are crispy, gather them into a pile and top with the chopped bacon and 8 oz of shredded cheddar cheese.
  • Cover with a dome and let sit for a few minutes until the cheese is fully melted.
  • Top with ¼ cup of chopped green onions and serve immediately.

Notes

Don’t overcrowd—keep fries in a single layer for crisping.
Remove excess grease to avoid soggy fries.
