Blackstone Shrimp Fajitas

  • Slice the peppers and onions into thin slices.
  • Preheat the Blackstone grill over medium high heat (approximately 400 degrees F).
  • Drizzle the avocado oil onto the grill and spread it out with a spatula.
  • Place the bell peppers and onions on one side of the grill and season it with half of the taco seasoning.  Toss the vegetables with the seasoning to thoroughly coat.  Let the peppers and onions cook for 1-2 minutes.  Then flip them to cook on the other side of the veggies for 1-2 minutes.
  • Add the shrimp to the other side of the grill once the vegetables are approximately halfway through their cook time. Season the shrimp with the remaining taco seasoning and toss it to coat it in the seasoning.  Cook the shrimp for 2-3 minutes until the shrimp is pink.  Flipping approximately every minute.
  • Toss the shrimp with the peppers and onions.  Then remove from the blackstone grill.
  • Clean any debris off the grill.  Place the flour tortillas on the grill and cook for 1 minute per side to warm them through.
  • Remove from the grill.  Assemble your shrimp fajitas with your favorite toppings and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 3 days.
