Blackstone Smashed Potatoes

Ingredients

  • 1 lb Baby Potatoes
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 3 Tbsp Butter
  • 1/2 Tbsp Oil

Instructions

  • Add 1 pound baby potatoes to a large pot and cover them with water. Bring the water to a boil and boil the potatoes for 15 to 20 minutes until they are fork tender.
  • Drain the potatoes and allow them to cool slightly.
  • Heat the Blackstone grill over high heat.
  • Place 3 tablespoons butter on the griddle and spread it out with a spatula.
  • Then place the cooked potatoes on the Blackstone grill and press them down with a cast iron press or your spatula.
  • Top the potatoes with 1/4 tablespoon oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cook for 3 to 5 minutes until the potatoes are golden brown.
  • Flip the potatoes and season the other side with the remaining 1/4 tablespoon oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cook for a few more minutes until golden brown.
  • Remove from the grill and serve warm with your favorite toppings. Enjoy!

Notes

*Refrigerate any leftover potatoes in an airtight container for up to 5 days.
*The cooking time will vary based on the size of your potatoes, so use your best judgement on when to flip the potatoes.
