Ingredients

  • 8 Breakfast Sausage Links
  • 2 Red Bell Peppers chopped
  • 1 Onion diced
  • 2 cups Shredded Hash Browns refrigerated
  • 4 Eggs
  • 1 teaspoon Seasoned Salt
  • 1/2 teaspoon Black Pepper
  • 1 cup Cheddar Cheese shredded

Instructions

  • Preheat the grill over medium high heat (approximately 400 degrees Fahrenheit).
  • Cut 4 large pieces of heavy duty foil into approximately 12X12 inches and spray the foil into non-stick cooking spray.
  • Evenly portion out the bell peppers, onions and shredded hash browns onto each of the pieces of foil.  Place 2 sausage links on top of each foil packet.
  • Season each of the ingredients in the packets with seasoned salt and pepper.
  • Then fold up the edges of the foil around the food to create a closed packet.
  • Place the foil packets on the grill over direct heat.  Grill for 15-18 minutes (flipping halfway through the cook time) until the veggies are tender.
  • Once the veggies are tender, carefully open up the foil packets (still on the grill) and crack an egg into the center of each.  Loosely cover the foil over the egg and close the lid on the grill.
  • Cook for 3-5 more minutes until the eggs are cooked through.
  • Remove from the grill.  Open each foil pack and top each one with a small amount of shredded cheese.  Loosely close the foil packets again to allow the heat from the meal to melt the cheese.
  • Once the cheese is melted, the foil packets are ready to serve and enjoy!

Notes

You can also bake these foil packs in the oven at 400 degrees F for 15-20 minutes until the veggies are tender.  Then add the egg and cook for 3-5 more minutes.
