Ingredients

  • 6 Thick Bone-In Pork Chops
  • 1 Tablespoon Olive Oil
  • 2 tsp Salt
  • 1 tsp Pepper

For the Glaze:

  • 2 Tablespoons Olive Oil
  • 4 Tablespoons Butter
  • 1/4 cup Brown Sugar
  • 2 teaspoon Minced Garlic
  • 1/2 teaspoon Crushed Red Pepper Flakes
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Dried Thyme Leaves

Instructions

  • Preheat your grill to 450 degrees Fahrenheit.
  • In a small saucepan, stir together the glaze ingredients.  Bring the mixture to a boil (stirring frequently).  Remove from the heat and set aside.
  • Rub the olive oil on both sides of the pork chops. Season the pork chops with salt and pepper.
  • Place the pork chops directly on the grill (on direct heat). Grill for 2 minutes per side. Then move the pork chops to indirect heat (upper rack).
  • Reduce the heat to medium and cook for another 10-15 minutes until the pork chops reach an internal temperature of 145 degrees Fahrenheit.
  • Rub the glaze mixture onto both sides of the pork chops with a basting brush for the last 2-3 minutes of the cooked time.
  • Let the pork chops rest for 5-10 minutes on a plate. Then serve warm and enjoy!

Notes

Recipe Tips
  • Hot Grill – Make sure to grill on a hot, clean grill. This prevents the meat from sticking and giving you those beautiful grill marks.
  • Turn down heat – After cooking the pork chops on high heat, then reduce the heat and continue cooking.
  • Don’t Overcook – Make sure to use your meat thermometer to check for doneness. If your pork chops cook to long, they can be dry and tough to eat. Cook the pork chops until internal temperature reaches 145 degrees.
  • Same Size – When I purchase Pork Chops, I try to pick the same size of thickness. So that the pork chops are done about the same time.
  • Grill Type – You can use a charcoal grill or gas grill to grill pork chops.
  • Rest Pork Chops - Make sure to allow the pork chops to rest after removing from grill.
Variations Ideas
  • Change the Pork - Feel free to use bone-in pork chops, pork tenderloin, or a pork loin to make this recipe.
  • Bake Pork Chops - This brown sugar glaze would be delicious on bake pork chops. Bake in the oven in a casserole dish at 400 degrees for about 20 minutes.
  • Seasoning - Feel free to change the seasoning or add in more spices. We recommend adding in ginger, garlic powder, or onion powder.
  • Marinade - Instead of using a dry rub you can make a marinade with the seasoning. Add in Soy sauce, a cup of apple juice or apple cider vinegar.
