Cajun Stir Fry

Cajun Stir Fry is a quick Blackstone dinner loaded with shrimp, andouille sausage, and fresh vegetables tossed in bold Cajun seasoning. Ready in about 25 minutes, it's an easy meal packed with flavor and perfect served over rice.

Ingredients

  • 1 tbsp avocado oil
  • 1 lb shrimp peeled and deveined
  • 1 tbsp Cajun seasoning plus more to taste, divided
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp butter
  • 12 ounces Andouille Sausage sliced into ½ inch thick slices
  • 1 zucchini sliced
  • 1 squash sliced
  • 1 bell pepper sliced
  • 1 small onion sliced
  • 2 tsp minced garlic jarred
  • 1 cup frozen corn kernels
  • Optional: cooked rice for serving. Blackstone Fried Rice is delicious with this.

Instructions

  • Heat the Blackstone griddle to medium-high until fully hot.
  • Add 1 tablespoon avocado oil to the griddle.
  • Place 1 lb shrimp in a single layer and season with 1 ½ teaspoons Cajun seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper.
  • Cook for 2–3 minutes per side, until pink and cooked through. Remove and set aside.
  • Add a little more oil if needed along with 1 tablespoon butter.
  • Add the sliced sausage, zucchini, squash, bell pepper, onion, and 1 cup frozen corn.
  • Season with the remaining 1 ½ teaspoons Cajun seasoning.
  • Cook for 5–7 minutes, stirring occasionally, until tender and lightly charred.
  • Stir in 2 teaspoons minced garlic and cook for about 30 seconds, until fragrant.
  • Return the shrimp to the griddle and toss everything together. Taste and add more Cajun seasoning if desired.
  • Serve hot over rice or enjoy as-is.

Notes

Don’t overcook the shrimp: Shrimp cooks quickly. Remove them as soon as they turn pink to keep them tender.
Preheat the griddle well: A hot Blackstone gives you that perfect sear and slight char on the veggies.
Cook in stages: Always cook shrimp first and remove, then add back at the end to avoid overcooking.
Adjust seasoning: Cajun seasoning levels can vary. Taste and add more if needed.
Use butter for flavor: Adding butter with the veggies gives a richer, restaurant-style taste.
Drain excess moisture from corn: If the frozen corn has ice crystals, shake or pat dry slightly before adding to avoid steaming.
