Preheat the grill to medium heat.
Lightly grease a 10” cast iron skillet with cooking spray or brush it with a thin layer of oil.
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
Mix the cold, diced butter with the flour mixture. Use a pastry cutter or your fingers to incorporate the butter into the flour until the mixture takes on a coarse, crumbly texture.
Make a well in the center of the flour mixture and pour in the buttermilk and honey (if using). Stir the mixture until the dough just comes together. Be careful not to over mix.
Turn the dough onto a lightly floured surface. Gently fold and pat the dough a few times, then shape it into a 1-inch thick round.
Use a biscuit cutter to cut out biscuits. Re-form the dough scraps to cut out additional biscuits until all the dough is used.
Carefully place the biscuits in the preheated and greased skillet, leaving some space between each.
Cover the grill and cook the biscuits for about 15-20 minutes, or until they are golden brown and cooked through. You can rotate the skillet occasionally to ensure even cooking.
Once the biscuits are done, remove the skillet from the grill and let the biscuits cool for a few minutes before serving.
