Chicken Fajita Foil Pack

Chicken Fajita Foil Pack is a quick and easy dinner idea. Chicken, vegetables and fajita seasoning all cooked in aluminum foil on the grill or in the oven.

Ingredients

  • 1 tablespoon Fajita seasoning
  • 1 fresh lime juiced
  • 2 pounds boneless skinless chicken breasts
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 white onion
  • For Serving:
  • Sour Cream
  • Shredded Cheese
  • Chopped Cilantro
  • Lime Wedges
  • Flour Tortillas

Instructions

  • Slice the bell peppers and the onions and add them to a large mixing bowl.
  • Slice the chicken breasts and add them to the bowl as well.
  • Season the chicken and vegetables with the fajita seasoning.  Use a large spoon to coat the chicken and vegetables with the seasoning.
  • Divide the chicken mixture between four 12×12 inch sheets of foil, then wrap the foil tightly around the contents to form your foil packs.
  • Grill over high heat for about 8-10 minutes on each side or until the chicken is cooked through (internal temperature of 165 degrees Fahrenheit).
  • Make sure to be careful when opening the foil packets as steam will be released.
  • Then the chicken mixture is ready to serve with your favorite fajita toppings or over tortillas and enjoy!

Notes

These also can be baked on a baking sheet at 425 degrees F for about 20 minutes until cooked through and has reached an internal temperature of 165 degrees F.  
Refrigerate the leftovers in an airtight container for up to 5 days.
