Chicken Hobo Dinner

Chicken Hobo Dinner is loaded with chicken, veggies and seasoning. All wrapped in aluminum foil for the perfect meal to make on the grill, oven, or campfire.

Ingredients

  • 4 Chicken Breasts
  • 4 Small Potatoes peeled and sliced into 1/4″ thick slices
  • 1/2 onion sliced
  • 3 Carrots peeled and sliced into 1 inch pieces
  • 1 can Cream of Chicken Soup
  • 1/2 cup Chicken Broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 packet dry Ranch Dressing Mix

Instructions

  • Preheat your grill over medium high heat (approximately 450 degrees Fahrenheit).
  • In a small bowl, whisk together the cream of chicken soup and chicken broth.
  • Coat 4 large pieces of heavy duty foil with non-stick cooking spray.
  • Place one potato (peeled and sliced) in the middle of each piece of foil.
  • Place about ¼ of the diced carrots and sliced onions on top of the potatoes.
  • Place a chicken breast on top of the vegetables on each piece of foil. Season the chicken with salt, pepper and ranch seasoning mix.
  • Pour the soup mixture evenly on top of each foil packet.
  • Fold up the sides of the foil. Then fold up the other sides to make a foil pack.
  • Place on the grill on medium high heat (or a campfire) for approximately 45 minutes-60 minutes or until the chicken breasts are cooked through (internal temperature of 165 degrees Fahrenheit)
  • Once they are done, carefully open the foil packs and then serve and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 5 days.
You can also bake these hobo dinners in the oven at 375 degrees F for 50-60 minutes until the chicken reaches an internal temperature of 166 degrees F.
