Ingredients

  • 4 Carrots peeled and cut into diagonal 1/4 inch slices
  • 1 tsp Minced Garlic
  • 2 Tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • Foil

Instructions

  • Preheat the grill to medium high heat.
  • Place 4 peeled and diagonally sliced carrots on a large piece of foil.
  • Top the carrots with 1 tsp minced garlic, 2 Tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper.
  • Fold the foil over the carrots and seal all the edges tightly to make a foil pack.
  • Place the foil pack on the grill and cook for 20 to 25 minutes, until the carrots are tender. Do not open or flip the foil pack while cooking.
  • Then carefully remove the carrots from the foil pack and move to a plate. Be careful when removing as the carrots will be hot and steam will be released from the foil pack when you open it.
  • Serve warm and enjoy!

Notes

I prefer fresh whole carrots for this recipe but you can slice baby carrots if you prefer.
Refrigerate the leftovers in an air tight container for up to 5 days. Reheat in the microwave or on the stove top.
