- 4 Carrots peeled and cut into diagonal 1/4 inch slices
- 1 tsp Minced Garlic
- 2 Tbsp Olive Oil
- 1/2 tsp Salt
- 1/4 tsp Pepper
- Foil
Preheat the grill to medium high heat.
Place 4 peeled and diagonally sliced carrots on a large piece of foil.
Top the carrots with 1 tsp minced garlic, 2 Tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper.
Fold the foil over the carrots and seal all the edges tightly to make a foil pack.
Place the foil pack on the grill and cook for 20 to 25 minutes, until the carrots are tender. Do not open or flip the foil pack while cooking.
Then carefully remove the carrots from the foil pack and move to a plate. Be careful when removing as the carrots will be hot and steam will be released from the foil pack when you open it.
Serve warm and enjoy!
I prefer fresh whole carrots for this recipe but you can slice baby carrots if you prefer.
Refrigerate the leftovers in an air tight container for up to 5 days. Reheat in the microwave or on the stove top.
