Grilled Jerk Chicken

Ingredients

  • 8 Bone-in Skin-on Chicken Thighs and Drumsticks (approximately 3 pounds)
  • 1 Tablespoon Olive Oil

For the Marinade:

  • 1 small Onion chopped
  • 2 scallions ends removed, chopped
  • 2 garlic cloves
  • 2 Habanero Peppers stem and seeds removed
  • 1/2 teaspoon Allspice
  • 1/2 Tablespoons Dried Thyme
  • 1/2 teaspoon Ground Nutmeg
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt
  • 1/2 cup Soy Sauce
  • 1 Lime Juiced

Instructions

  • Place all the marinade ingredients in a blender or food processor and blend on high until combined and smooth.
  • Place the chicken in a large bowl or bag. Pour the marinade on top and make sure that the chicken is completely covered in the marinade.
  • Refrigerate and marinade for at least 1-2 hours for the best flavor (overnight works as well).
  • Let the chicken sit at room temperature while you preheat the grill over medium high heat.
  • Clean the grill grates thoroughly and rub them with the olive oil to keep the chicken from sticking to the grill.
  • Place the chicken, skin side down, on the grill grates.  Cook for 20-30 minutes, flipping them every 2-3 minutes, until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Make sure to flip them often so that the skin does not get overcooked.
  • Move the chicken from the grill to a plate. Cover the chicken with foil and let it rest for 10 minutes.
  • Then it’s ready to serve and enjoy!

Notes

Refrigerate any leftovers in an airtight container for up to 5 days.
I use an instant-read meat thermometer to make sure that the chicken is cooked to the correct temperature before removing it from the grill. 
You can top with extra lime juice once it’s removed from the grill to add a little bit of extract tangiest if you prefer!
