Instructions
Let the prime rib sit at room temperature for 1-2 hours before cooking so that it can come to room temperature.
Mix together the olive oil with the seasonings in a small bowl.
Rub the seasoning mixture on the outside of the prime rib roast.
Preheat a grill to 250 degrees Fahrenheit.
Place the prime rib on the grill over indirect heat, fat side up.
Close the lid on the grill and cook for 2-3 hours until the prime rib reaches an internal temperature of 110 degrees Fahrenheit.
Increase the temperature on the grill to 400 degrees Fahrenheit.
Cook for 30-40 more minutes until the beef reaches an internal temperature of 135 degrees Fahrenheit.
Remove the prime rib from the grill. Cover it with foil and let it rest for 30 minutes.
Slice the roast against the grain is approximately 1/2 inch thick slices. Serve with your favorite sides and enjoy!
Notes
Refrigerate the leftovers in an airtight container for up to 5-7 days.
