Ingredients

  • 7 lbs Prime Rib
  • 1/4 cup Olive Oil
  • 2 tsp Salt
  • 2 tsp Black Pepper
  • 1 tsp Fresh Rosemary
  • 1 tsp Fresh Thyme
  • 2 Tbsp Minced Garlic

Instructions

  • Let the prime rib sit at room temperature for 1-2 hours before cooking so that it can come to room temperature.
  • Mix together the olive oil with the seasonings in a small bowl.
  • Rub the seasoning mixture on the outside of the prime rib roast.
  • Preheat a grill to 250 degrees Fahrenheit.
  • Place the prime rib on the grill over indirect heat, fat side up.
  • Close the lid on the grill and cook for 2-3 hours until the prime rib reaches an internal temperature of 110 degrees Fahrenheit.
  • Increase the temperature on the grill to 400 degrees Fahrenheit.
  • Cook for 30-40 more minutes until the beef reaches an internal temperature of 135 degrees Fahrenheit.
  • Remove the prime rib from the grill.  Cover it with foil and let it rest for 30 minutes.
  • Slice the roast against the grain is approximately 1/2 inch thick slices. Serve with your favorite sides and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 5-7 days.
