Grilled Shrimp Scampi

Grilled Shrimp Scampi is an classic Italian dish made on your grill. The Shrimp is cooked in a lemon butter sauce and served over pasta.

Ingredients

  • 1 ½ pounds Large Raw Shrimp peeled and deveined
  • ¼ cup Butter
  • ¼ cup Olive Oil
  • ¼ cup Chicken Broth
  • ¼ cup Dry White Wine or cooking wine
  • 1 Lemon juiced
  • 1 Tablespoon Minced Garlic
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 2 Tablespoons Fresh Parsley chopped
  • 8 oz Angel Hair Pasta

Instructions

  • Preheat a grill over medium high heat (approximately 400 degrees F) and cook the pasta based on the package instructions to al dente.
  • In a mixing bowl, stir together the olive oil, chicken broth, dry white wine, lemon juice, minced garlic, salt and pepper.
  • Place a cast iron skillet on the grill and drizzle olive oil in the pan.  Add the shrimp and sauté for 2-3 minutes until the shrimp turns pink.
  • Pour the sauce into the skillet and cook for 1-2 minutes until the garlic is aromatic.  Then add in the butter and allow it to melt.
  • Toss in the angel hair pasta and top with the fresh parsley.
  • Remove the pan from the heat. Serve immediately while warm and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 3 days.
