Grilled Vegetable Marinade

- 1 Medium Zucchini sliced
- 1 Red Onion (sliced
- 1 Red Bell Pepper sliced
- 8 ounces Mushrooms halved
- 1 cup Cherry Tomatoes
For the Marinade:
- 1/4 cup Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Basil
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
Prepare the vegetables and place them in a large bowl.
In a separate bowl, whisk together the marinade ingredients. Pour over the vegetables and gently toss to coat the vegetables with the marinade.
Preheat the grill over medium high heat (approximately 350 degrees Fahrenheit).
Place the marinade vegetables in a grill basket, grill mat or a cast iron skillet. Place on the grill and cook for 8-12 minutes, tossing every few minutes, until the vegetables are tender and cooked to your preference.
Remove from the grill, serve warm and enjoy!
If you do not have a grill basket, mat or cast iron skillet, cut the vegetables large enough to place directly on the grill grates without slipping through.
Refrigerate the leftovers in an airtight container for up to 5 days.
