Ground Chicken Lettuce Wraps

For the Sauce:

Instructions

  • Whisk together the sauce ingredients in a mixing bowl. Set aside.
  • Preheat a Blackstone grill over medium high heat.
  • Drizzle the oil onto the grill. Once hot, add the ground chicken to the grill.
  • Cook the chicken for 3-6 minutes, breaking it up as it cooks until it's no longer pink and cooked through. Push the chicken to a cooler side of the grill.
  • Add the onions, bell pepper and water chestnuts to the grill and sauté for 2-3 minutes until soft.
  • Add the garlic and cook for 1 minute until you can start to smell the garlic.
  • Add the ground chicken and sauce to the veggies and toss for 1-2 minutes until everything is coated and heated through.
  • Remove the mixture from the grill.
  • Spoon onto the butter lettuce leaves.
  • Top with chopped green onions, serve and enjoy.

Notes

Ground beef, ground pork and finely diced chicken breasts can be used in this recipe instead of the ground chicken if preferred.  
You can use any type of oil with a high smoke point for this recipe. I used avocado oil but olive oil, peanut oil or vegetable oil would work as well. 
This recipe cooks quickly. Prepare all the ingredients and have them close to the Blackstone grill when you start to cook it so that nothing burns. 
Refrigerate any leftovers in an airtight container for up to 5 days.  
Coconut Aminos can be used instead of Soy Sauce in this recipe if needed for a gluten free option.
