- 8 slices Bacon cut in half
- 1 Yellow Onion finely chopped
- 1 Green Bell Pepper finely chopped
- 2 cans Baked Beans 28 ounces each
- ¾ cup Barbecue Sauce
- ¼ cup Brown Sugar
- 2 Tablespoons Dijon Mustard
- 1/4 teaspoon Garlic Powder
Preheat the smoker to 250 degrees F.
Preheat a cast iron skillet in the smoker. Cook the bacon in the skillet for 3-4 minutes per side until the bacon is cooked through but not crispy.
Remove the bacon from the pan to a plate lined with a paper towel.
Add the diced onions and green bell peppers to the skillet with the bacon grease and sauté them for 3-5 minutes until tender and the onions are translucent.
Add in all the remaining ingredients and carefully stir to combine them all together.
Top the mixture with the bacon pieces.
Smoke the beans for 2-3 hours, stirring every hour, until the mixture is thick and saucy.
Remove the beans from the smoker, allow them to cool slightly and then they are ready to serve and enjoy!
Refrigerate the leftovers in an airtight container for up to 5 days.
If you prefer more spice in your beans, you can use a jalapeño pepper (deseeded and diced) instead of the bell pepper in this recipe.
