Preheat a smoker to 225 degrees F with a water pan.
Place the brats in the smoker directly on the grates. Smoke them for 1.5-2 hours until the brats reach an internal temperature of 160 degrees Fahrenheit.
Remove the brats from the smoker. Serve on the buns topped with sauerkraut and enjoy!
Use an instant-read meat thermometer to make sure that the brats are cooked to a safe temperature before removing it from the smoker.
Make sure to add chips to the smoker every 15 minutes if your smoker does not have an automatic feature.
Refrigerate the leftovers in an airtight container for up to 5 days.
