Smoked Chorizo Queso

Smoked Chorizo Queso is a creamy, cheesy dip that is perfect for any occasion. This smoked queso dip has delicious smoky flavor.

Ingredients

  • 1 pound Ground Chorizo
  • 1/2 Onion diced
  • 1 Block Velveeta Cheese 32 ounces diced
  • 8 ounces Plain Cream Cheese
  • 8 ounces Shredded Pepper Jack Cheese
  • 1 can Diced Tomatoes with Green Chiles 20 ounces
  • 2 Jalapeños finely diced
  • 1/2 cup Milk

Instructions

  • Preheat a smoker with a water pan to 250 degrees Fahrenheit.
  • Brown the chorizo with the diced onion in a large skillet and set aside.
  • Add all the ingredients to a large cast iron skillet or disposable pans.
  • Place the pan on the grill grates over indirect heat and close the smoker.  Cook for 1.5-2 hours, stirring every 30 minutes.
  • Once done, serve with chips and enjoy!

Notes

Make sure to add chips to the smoker every 15 minutes if your smoker does not have an automatic feature.  
Refrigerate any leftover dip in an airtight container for up to 3-4 days. 
If your dip is too thick, gradually stir in milk until the queso is the consistency that you prefer.
