Ingredients

  • 3 lbs Russet Potatoes
  • 1/2 cup Butter softened
  • 4 ounces Cream Cheese softened
  • 1/2 cup Heavy Cream
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  • Preheat the smoker to 225 degrees Fahrenheit.
  • Clean and peel the potatoes. Then quarter them.
  • Place the potatoes in a large pot and cover them with water. Bring to a boil and simmer for about 10-15 minutes until the potatoes are fork tender.
  • Drain the potatoes and then return them back to the pot.
  • Then add in the butter, cream cheese, milk, salt and pepper. Use an electric mixer to blend the potatoes until they are light and fluffy or use a hand masher to mash them to the consistency that you prefer.
  • Spread the mashed potatoes into a cast iron skillet or a disposable aluminum pan.
  • Place the potatoes in the smoker and cook for them 45-60 minutes until the potatoes have a deep smoked flavor.
  • Serve warm and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 5 days.
