Smoked Pork Chops

  • Preheat a smoker with a water pan to 225 degrees F.
  • Mix the rub ingredients together in a small bowl.
  • Pat the pork chops dry with a paper towel to remove any excess moisture from the pork chops.
  • Then rub the olive oil and rub mixture onto both sides of the pork chops.
  • Then place the pork chops directly on the grates in the smoker.
  • Cook the pork for 60-90 minutes depending on the thickness of the pork chops until the pork reaches an internal temperature of 145 degrees F.
  • Remove the pork from the smoker.  Let it sit for 5 minutes and then it’s ready to serve and enjoy!

Notes

Use an instant-read meat thermometer to make sure that the pork is cooked to a safe temperature before removing it from the smoker.  
Make sure to add chips to the smoker every 15 minutes if your smoker does not have an automatic feature.  
Refrigerate the leftovers in an airtight container for up to 5 days.
