Smoked Pork Steak

Ingredients

  • 4 Pork Steaks
  • 2 Tablespoons Kosher Salt
  • 1/4 cup Yellow Mustard
  • 1/2 cup Barbecue Sauce

For the Rub:

  • 1/2 cup Brown Sugar
  • 1/4 cup Salt
  • 2 teaspoons Chili Powder
  • 1 Tablespoon Paprika
  • 1 Tablespoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Pepper optional

Instructions

  • Place the pork steaks on a baking sheet and season both sides with the salt.  Refrigerate for 2 hours to brine the pork steaks.
  • Remove the pork from the refrigerator and allow it to come to room temperature (30-50 minutes).  Preheat the oven to 225 degrees Fahrenheit.
  • Rub the yellow mustard onto both sides of the pork steaks.
  • Mix together the rub ingredients and season both sides of the pork steaks evenly with the rub mixture.
  • Place the pork steaks in the smoker directly on the grates.  Smoke for approximately 2 hours.
  • Brush both sides of the pork steak with barbecue sauce.  Smoke for 15 minutes.  Flip and brush the pork steaks with the barbecue again.  Smoke for 30 more minutes until the pork steaks reach an internal temperature of 185 degrees Fahrenheit.
  • Remove from the smoker and let the pork rest for 10-15 minutes.  Then it’s ready to serve and enjoy!

Notes

A pork steak is a pork butt sliced into 1/2-3/4 inch thick slices.  Your butcher should be able to prepare these for you. 
Refrigerate any leftovers in an airtight container for up to 3-4 days.
