Preheat a smoker with a water pan to 250 degrees Fahrenheit.
Add all the ingredients to a disposable 9X13 aluminum pan or a large cast iron skillet.
Place the pan on the grill grates over indirect heat and close the smoker. Cook for 2 hours, stirring every 15 minutes.
Once done, serve with chips and enjoy!
Make sure to add chips to the smoker every 15 minutes if your smoker does not have an automatic feature.
Refrigerate any leftover dip in an airtight container for up to 3-4 days.
If your dip is too thick, gradually stir in milk until the queso is the consistency that you prefer.
