Bacon Wrapped Onion Rings

- 12 slices Yellow Onion approximately ¾ inch thick
- 12 slices Bacon
- 2 teaspoon Garlic Powder
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat your smoker to 275 degrees Fahrenheit.
Carefully wrap each slice of onion with a slice of the bacon making sure that the bacon does not overlap too much. Tuck in the end of the bacon or secure it to the onion with a toothpick if needed.
Season with garlic powder, salt and pepper.
Place the prepared onion rings on the grate in the smoker and smoke for 90 minutes (flipping them halfway through the cook time). Start checking the onion rings after they have smoked for 75 minutes and then continue to cook until the bacon is the doneness that you prefer.
Remove the onion rings from the smoker. Allow them to cool slightly and then they are ready to serve and enjoy!
Don’t use fancy bacon for this recipe. I like to use regular thickness to ensure that it’s cooked through in the smoker.
If you prefer softer bacon, pull the onion rings out of the smoker after around 75 minutes. If you like crispier bacon, continue to cook for the full 90 minutes.
These are best served immediately but you can refrigerate any leftovers in an airtight container for up to 5 days.
