Step 1 – Carefully wrap each slice of onion with a slice of bacon making sure that the bacon does not overlap too much. Tuck in the end of the bacon or secure it to the onion with a toothpick if needed. Make sure entire onion is covered.

Step 3 – Place the prepared onion rings on the grill grate in the smoker and smoke for 90 minutes (flipping them halfway through the cook time). Start checking the onion rings after they have smoked for 75 minutes and then continue to cook until the bacon is the doneness that you prefer.

Step 4 – Remove the crispy bacon onion rings from the smoker.  Allow them to cool slightly and then they are ready to serve and enjoy! Serve with your favorite BBQ Sauce or Ranch Dressing for an easy dipping sauce for the ultimate comfort food.

Recipe tips

  • Type of Bacon – Don’t use fancy bacon for this recipe. I like to use regular thickness to ensure that it’s cooked through in the smoker.
  • Softer Bacon – If you prefer softer bacon, pull the onion rings out of the smoker after around 75 minutes. If you like crispier bacon, continue to cook for the full 90 minutes.
  • Make Ahead – These onion rings can be prepared ahead of time by wrapping the bacon around the onion and placing in the fridge. We recommend smoking within about 24 hours of preparing.

Flavor Variations

  • Buffalo Style – Toss finished rings in buffalo sauce and top with crumble blue cheese.
  • Maple Pepper Flavor – Brush maple syrup at the last 5 minutes of cooking. Then grind black pepper over.
  • Everything Bagel Seasoning – Sprinkle Everything Bagel Seasoning over the top right before smoking the onion rings.

Frequently Asked Questions

Can I Use Turkey Bacon?

Yes, you can make this recipe with turkey bacon. You may need to add an extra 2 minutes to cooking time as it take a little longer for turkey bacon to brown.

How to Cut Onion

Slice the onion into thick slices, about ¾ inches thick. Keep the rings together as it helps to keep the rings studier as you smoke or place on the grill. You can also buy pre-sliced onion rings in the produce section to skip peeling.

Does the Onion Cook Through?

Yes, the smoker smokes the onion tender with tons of flavor.

Storage and Reheating Tips

  • Fridge – These are best served immediately but you can place any leftovers in an airtight container for up to 5 days in the refrigerator.
  • Reheat – To keep the crisp texture, reheat the bacon wrapped onion rings in the oven or the air fryer at 375 degrees for about 5 minutes.

These sound fabulous! My husband is the griller in the family, We don’t have a smoker and he is on oxygen 24/7 now so grilling on the propane BBQ is out of the question. Can these be cooked in oven/broiler? I know it would not be the same but the concept sounds so good. They sound like they would be great on hamburgers.
