Ingredients

Ingredients - Tomatoes, olive oil, garlic, salt, black pepper, oregano, fresh basil
  • Ripe Tomatoes – Choose tomatoes of your choice
  • Olive Oil – Use oil of your choice. We also like using Avocado Oil
  • Cloves Garlic, minced – Learn How to Mince Garlic
  • Dried Oregano – You can also use Italian Seasoning or fresh herbs such as thyme or rosemary.
  • Fresh Basil– Garnish with Fresh Basil and a drizzle of balsamic vinegar for added flavor

How to Make Smoked Tomatoes

  • Step 1 – Preheat the smoker to 225°F

Step 2 – Wash the tomatoes and cut them in half horizontally.

Step 3 – In a small bowl, mix together the olive oil, minced garlic, salt, pepper, and dried oregano.

Step 4 – Brush the cut side of each tomato half with the garlic and herb oil mixture.

Step 5 – Place the tomato halves, cut side up, directly on the smoker grates.

Step 6 – Smoke the tomatoes for about 2 hours, or until they are soft and have absorbed the smoke flavor.

Step 7 – Remove the tomatoes from the smoker and let them cool slightly. Garnish with fresh chopped basil before serving.

Recipe Tips

  • Tomatoes – Pick tomatoes that are ripe but still firm, they’ll hold up better during smoking. If they’re too soft, they might get mushy.
  • Slicing Tomatoes – Slice the tomatoes in about the same size pieces. We like to slice into thick slices so that the tomatoes smoke evenly and about the same time.
  • Smoking Tomatoes – Cooking time will vary and you will know they are done when the tomatoes are soft.
