- 6 medium-sized ripe tomatoes
- 3 tablespoons olive oil
- 4 cloves garlic minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 tablespoon fresh basil chopped, for garnish
Preheat the smoker to 225°F.
Wash the tomatoes and cut them in half horizontally.
In a small bowl, mix together the olive oil, minced garlic, salt, pepper, and dried oregano.
Brush the cut side of each tomato half with the garlic and herb oil mixture.
Place the tomato halves, cut side up, directly on the smoker grates.
Smoke the tomatoes for about 2 hours, or until they are soft and have absorbed the smoke flavor.
Remove the tomatoes from the smoker and let them cool slightly.
Garnish with fresh chopped basil before serving.
Pick tomatoes that are ripe but still firm, they’ll hold up better during smoking. If they're too soft, they might get mushy.
Refrigerate the leftover tomatoes in an airtight container for up to 1 week.
