Ingredients - Ground Chorizo, onion, velveeta cheese, cream cheese, pepper jack cheese, diced tomatoes, jalapenos, milk
  • Ground Chorizo Sausage – You can also use breakfast sausage and ground beef
  • Shredded Pepper Jack Cheese – You can also add in Monterey Jack Cheese and cheddar cheese
  • Diced Tomatoes with Green Chiles – We like using a can of Rotel
  • Jalapenos – You can use jar or fresh jalapenos

How to Make Smoked Chorizo Queso

  • Step 1 – Preheat a smoker with a water pan to 250 degrees Fahrenheit.

Step 2 – Brown the chorizo with the diced onion in a large skillet and set aside.

Diced velveeta, shredded pepper jack cheese, chorizo, cream cheese, diced tomatoes, and diced jalapenos

Step 3 – Add all the ingredients to a large cast iron skillet or disposable aluminum pan.

Step 4 – Place the pan on the grill grates over indirect heat and close the smoker.  Cook for 1.5-2 hours, stirring every 30 minutes.

Step 5 – Once done, serve with chips and enjoy!

Recipe Tips 

  • Wood Chips – Make sure to add chips to the smoker every 15 minutes if your smoker does not have an automatic feature.  
  • Dip Consistency – If your dip is too thick, gradually stir in milk until the queso is the consistency that you prefer.
  • Stir Cheese Dip – To ensure that the queso does not melts completely, we recommend stirring the queso throughout the cooking process.

Ingredients

  • 1 pound Ground Chorizo
  • 1/2 Onion diced
  • 1 Block Velveeta Cheese 32 ounces diced
  • 8 ounces Plain Cream Cheese
  • 8 ounces Shredded Pepper Jack Cheese
  • 1 can Diced Tomatoes with Green Chiles 20 ounces
  • 2 Jalapeños finely diced
  • 1/2 cup Milk

Instructions
