- Shredded Pepper Jack Cheese – You can also add in Monterey Jack Cheese and cheddar cheese
- Diced Tomatoes with Green Chiles – We like using a can of Rotel
- Jalapenos – You can use jar or fresh jalapenos

How to Make Smoked Chorizo Queso
- Step 1 – Preheat a smoker with a water pan to 250 degrees Fahrenheit.

Step 2 – Brown the chorizo with the diced onion in a large skillet and set aside.

Step 3 – Add all the ingredients to a large cast iron skillet or disposable aluminum pan.

Step 4 – Place the pan on the grill grates over indirect heat and close the smoker. Cook for 1.5-2 hours, stirring every 30 minutes.

Step 5 – Once done, serve with chips and enjoy!
