We love making recipes in our seasoned cast iron skillet and this skillet queso dip is no exception. We love to make it and serve it with out Taco Tuesday meal or for our family gatherings. My entire family loves when we make this cheese dip for an easy side dish.

Why This Recipe Works

This is the best queso recipe and even better served on nachos. Melting the shredded cheese with the tomatoes, milk, onions and diced jalapenos makes this cheese dip a family favorite.

We love that this queso can be made in a variety of ways and perfect to serve for any occasion.  

Ingredients

Variations Ideas

  • Cheese – Feel free to change the cheeses to what you prefer. Velveeta cheese, pepper jack cheese are a delicious combination, but you can also add in cheddar cheese. Cream cheese and Monterey Jack Cheese are another great addition.
  • Meat – For a hearty queso dip add in cooked sausage, chorizo, or ground beef.
  • Other Additions – This queso can be made with additional ingredient. Try adding in chopped red pepper, green bell peppers, and green chilies.

Step by Step Instructions

  • Step 1 – Preheat a grill over medium high heat (approximately 350-400 degrees Fahrenheit).  
  • Step 2 – Add all the ingredients to a cast iron skillet.

  • Step 3 – Place the skillet with the ingredients on the grill and close the lid.

  • Step 4 – Allow the mixture to cook for 15-20 minutes until the cheese has melted and the mixture starts to bubble around the rim of the pan.

  • Step 5 – Carefully remove the skillet from the grill.  Stir until all the ingredients are well combined.  
  • Step 6 – Serve immediately with tortilla chips and your favorite toppings.  Enjoy! 

Recipe Tips

  • Cutting Cheese – Make sure to cut the cheese into about the same size of cubes. This allows the cheese to melt easily.
  • Pre-Shredded Cheese – We recommend using cheese products that are fresh cheese. Pre-shredded cheese does not melt as evenly and has added ingredients.
  • Cooking Time – Cooking Time will vary based on your grill. Make sure to check to make sure the cheese does not burn.
