Cast Iron Queso

Make this Cast Iron Queso for your next game day party! It is loaded with flavor and the cheese melts perfectly in a cast iron skillet. Serve with your favorite dippers for a crowd pleasing dip.

Ingredients

  • 32 oz. Velveeta Cheese diced
  • 18 oz. Pepper Jack Cheese diced
  • 10 oz. Diced Tomatoes with Green Chiles
  • 1/2 Onion finely diced
  • 1 Tablespoon Minced Garlic
  • 3 Tablespoons Picked Jalapeños diced
  • 1 cup Milk

Instructions

  • Preheat a grill over medium high heat (approximately 350-400 degrees Fahrenheit).
  • Add all the ingredients to a cast iron skillet.
  • Place the skillet with the ingredients on the grill and close the lid.
  • Allow the mixture to cook for 15-20 minutes until the cheese has melted and the mixture starts to bubble around the rim of the pan.
  • Carefully remove the skillet from the grill.  Stir until all the ingredients are well combined.
  • Serve immediately with tortilla chips and your favorite toppings.  Enjoy!

Notes

Here are some great optional toppings for this queso: salsa, tomatoes, fresh jalapeños, red onions, cilantro, etc. 
Refrigerate any leftovers in an airtight container for up to 5-7 days. 
Reheat in the microwave, stovetop or on the grill.  You will likely need to add more milk as the cheese will thicken as it sets.
