Bang Bang Chicken Skewers

Ingredients

For the Chicken:

  • 2 pounds Boneless Skinless Chicken Breasts (diced into 1 inch cubes)
  • 1 Tablespoon Olive Oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp cayenne pepper
  • ½ tsp salt

For the Bang Bang Sauce:

  • 1 cup Mayonnaise
  • cup Thai Sweet Chili Sauce
  • 2 teaspoons Sriracha Sauce

Instructions

  • Soak wooden skewers in cold water for at least 30 minutes to prevent them from burning on the grill.
  • Mix the ingredients together for the bang bang sauce. Separate the sauce into 2 bowls evenly (save one for serving).
  • In a large mixing bowl, stir together the diced chicken, olive oil, paprika, garlic powder, black pepper, cayenne pepper and salt.
  • Thread the chicken onto the wooden skewers. Brush both sides of the chicken with one bowl of the bang bang sauce.
  • Place the chicken skewers directly on the grill and cook for 15-20 minutes, flipping them halfway through the cooking time until the chicken reaches an internal temperature of 165 degrees F.
  • Brush the chicken with the reserved bang bang sauce. Serve warm and enjoy!

Notes

Use an instant-read meat thermometer to make sure that the chicken is cooked through before removing it from the grill.
