Preheat the Blackstone Grill over medium high heat (approximately 400 degrees F).
Place bacon slices on the Blackstone Grill on one side on the griddle. Cook the bacon until the bacon is crispy. Move the bacon from the grill to a plate lined with a paper towel to soak up the excess grease.
Butter one side of each of the pieces of bread and set them aside.
Melt the remaining butter onto the Blackstone grill.
Crack the eggs on one side of the Blackstone grill and season them with salt and pepper. Cook for 4-6 minutes until the egg whites are cooked through and the yolk is cooked to your preference.
Place 2 slices of the bread butter side down onto the grill.
Top each piece with 1 slice of cheddar cheese.
Then top each with 2 fried eggs and 2 slices of cooked bacon.
Top with a slice of the pepper jack cheese.
Next top with the other pieces of bread, butter side up.
Cook both of the sandwiches over medium high heat until golden brown (4-5 minutes). Flip the sandwiches and cook the other side for 4-5 more minutes until golden brown.
Remove the skillet, cut in half and enjoy!
Notes
These are best served fresh. You can use mayonnaise instead of butter in this recipe if you prefer. Also, these sandwiches are great with any of your favorite types of cheese.
