Blackstone Beef Stroganoff

Ingredients

  • Avocado Oil for the griddle
  • 1/2 Onion diced
  • 8 Ounces White Mushrooms sliced
  • 1 pound Steak sirloin, round or flank steak (thinly shaved)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 cloves garlic minced or 2 teaspoon Minced Garlic
  • 16 ounces Egg Noodles
  • 1/2 cup Beef Broth
  • 1 Tablespoon Worcestershire Sauce
  • 1 cup Sour Cream
  • Sliced Green Onions for serving

Instructions

  • Cook the egg noodles based on the package instruction to al dente and rinse with cold water. Set aside.
  • Preheat a Blackstone grill or large griddle over high heat.
  • Drizzle avocado oil onto the grill once hot.
  • Add the onions and sliced mushrooms to the griddle and cook for approximately 5 minutes until they are tender and the onions are translucent.
  • Push them to one side of the grill.
  • Add the sliced steak and minced garlic onto the grill. Season the steak with salt and pepper.
  • Cook for 3-4 minutes until it’s cooked through.
  • While the steak is cooking, stir together the beef broth, Worcestershire sauce and sour cream together in a small bowl.
  • Add the cooked noodles to the griddle and carefully toss the noodles with the steak, mushrooms and onions until everything is evenly mixed.
  • Pour the sour cream mixture on top and toss continuously for approximately 2 minutes until the sauce covers the meat and noodles and it has thickened slightly.
  • Remove the mixture from the griddle. Serve warm topped with green onions and more sour cream (if you prefer) and enjoy!

Notes

Any oil with a high smoke point can work for this recipe. I love using avocado oil but vegetable oil, coconut oil or canola oil would all work. 
Be careful when tossing in the noodles with the beef mixture as the noodles will be tender and can break easily.  
Refrigerate any leftovers in an airtight container for up to 5 days.
