Why You’ll Love Flat-Top Stroganoff
- Minimal Prep – The Blackstone Recipe takes minutes to prepare. Just cook the noodles and chop the veggies. You can easily do that ahead of time.
- Large Cooking Surface – There is no need to dirty up a bunch of dishes. Because of the large cooking surface everything can cook easily with even temperature.
- Simple Ingredients – All you need is ingredients you can easily find at the grocery store and you may even have a few of them stocked in your pantry.
Ingredients

- Avocado Oil – Use oil of your choice
- Onion – We used white onion and finely chop with a vegetable chopper
- White Mushrooms – I like to buy the already sliced mushrooms. You can omit if you do not like mushrooms
- Steak – Use sirloin, round or flank steak that is thinly shaved
- Cloves Garlic, minced – You can also use garlic powder
- Egg Noodles – Cook noodles before adding to the griddle
- Beef Broth – You can also use water or chicken broth
- Worcestershire Sauce – Adds warm flavors
- Sour Cream – You can also use Greek Yogurt
- Sliced Green Onions – I like to garnish the beef stroganoff with green onions when serving.

How to Make Beef Stroganoff on the Blackstone Griddle

Step 1 – Cook the egg noodles based on the package instruction to al dente and rinse with cold water. Set aside.

Step 2 – Preheat a Blackstone grill or large griddle over high heat. Drizzle avocado oil onto the grill once hot. Add the onions and sliced mushrooms to the griddle and cook for approximately 5 minutes until they are tender and the onions are translucent with desired crispness.

Step 3 – Add the sliced steak and minced garlic onto the grill. Season the steak with salt and pepper. Cook for 3-4 minutes until it’s cooked through.

Step 4 – While the steak is cooking, stir together the beef broth, Worcestershire sauce and sour cream together in a small bowl.

Step 5 – Add the cooked noodles to the griddle and carefully toss the noodles with the steak, mushrooms and onions until everything is evenly mixed.

Step 6 – Pour the sour cream mixture on top of that mixture and toss continuously for approximately 2 minutes until the sauce covers the beef base and noodles and it has thickened slightly.
- Step 7 – Remove the mixture from the griddle. Serve warm topped with green onions and more sour cream (if you prefer) and enjoy!
Pro Tips
- Oil – Any oil with a high smoke point can work for this recipe. I love using avocado oil but vegetable oil, coconut oil or canola oil would all work.
- Combining Ingredients – Be careful when tossing in the noodles with the beef mixture as the noodles will be tender and can break easily.
- Preparing Griddle – Make sure to preheat griddle before adding the meat. This will help to create the best texture. Check out How to Clean Blackstone Griddle for after you are finishing cooking on the Blackstone Griddle.
Variations Ideas
- Smoked Gouda – To enhance the smoky flavor, mix in ½ cup of shredded gouda into the sauce.
- Mushrooms – We used white mushrooms but you can also use 1 c Shiitaki mushrooms.
- Noodles – The classic beef stroganoff is made with egg noodles but you can also use precooked ramen noodles or a noodle of your choice.

Frequently Asked Questions
We recommend using sirloin steak, round steak or flank steak that has been thinly sliced. Tenderloin or ribeye can also be used because they are known for being tender and have good marbling.
Yes, you can make this recipe with 1 lb ground beef. We like to use 80/20 for the best flavor. Make sure to drain the grease before combining with the other ingredients.
When adding the sour cream mixture to the beef mixture, we recommend pouring over low heat. This will help to keep the sour cream from separating for the best flavor.
Storage and Reheating Tips
- Fridge – Store any leftovers in an airtight container for up to 5 days in the refrigerator.
- Freezer – If you plan on freezing the leftovers, we recommend freezing without the noodles. Place the beef and sauce mixture in a freezer safe container and freeze for up to 2 months. Thaw in the fridge overnight and toss with fresh noodles for a delicious meal.
- Reheating – You can reheat on low heat on the flat top griddle or reheat in the microwave.
