Blackstone Bourbon Chicken

Ingredients

  • 1 Tablespoon Avocado Oil
  • 2 pounds Boneless Skinless Chicken Breasts (thinly sliced)
  • 1/2 Onion diced into bite size pieces
  • 1 Green Bell Pepper diced
  • 1 Red Bell Pepper diced
  • Green Onions sliced for serving

For the Sauce:

  • 1/2 cup Chicken Broth
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup Bourbon
  • 1 Tablespoon Cornstarch
  • 3 Tablespoons brown sugar
  • 2 Tablespoons honey
  • 3 Tablespoons apple cider vinegar
  • 1/4 teaspoon ground ginger
  • 1 Tablespoon minced garlic
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Red Pepper Flakes

Instructions

  • Whisk all the sauce ingredients together in a medium size mixing bowl and set aside.
  • Preheat a Blackstone grill or griddle over medium high heat (approximately 400-450 degrees F).
  • Spread the avocado oil into a thin layer on the griddle.
  • Spread the sliced chicken breasts into a single layer onto the griddle.
  • Allow the chicken to cook for 4-5 minutes until browned. Flip the chicken and let it cook on the other side of the chicken for 3-4 more minutes until browned.
  • Add the diced onions and bell peppers to the chicken and toss to combine the ingredients. Cook for about 2-3 minutes until the vegetables are tender.
  • Pour the sauce mixture on top and toss to coat the chicken and vegetables with the sauce.
  • Let it cook for a few minutes, stirring occasionally, until the sauce has thickened and the chicken is cooked through.
  • Remove the chicken and vegetables from the grill to a separate platter. Serve as is or over rice topped with the sliced green onions. Enjoy!

Notes

Any oil with a high smoke point can work for this recipe. I love using avocado oil but vegetable oil, coconut oil or canola oil would all work. 
Once the sauce has been added to the griddle, make sure to toss the mixture, to prevent the soy sauce from burning onto the grill. 
Refrigerate any leftovers in an airtight container for up to 5 days.
