- 4 catfish fillets
- 3 tablespoons vegetable oil
- 2 tablespoons butter
- 1 lemon
For the Seasoning:
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried thyme
Preheat Blackstone griddle over medium heat.
In a small bowl, mix the garlic powder, onion powder, paprika, salt, pepper, and dried thyme until well combined.
Pat the catfish fillets dry with paper towels, then coat each fillet lightly with vegetable oil. Sprinkle the seasoning mixture evenly over both sides of the fillets.
Add the remaining vegetable oil and butter to the griddle. When the butter has melted and the griddle is hot, place the fillets on the griddle.
Cook for 4-5 minutes on each side, or until golden brown and the fish flakes easily with a fork.
Cut the lemon in half. Squeeze one half over the fish just before removing it from the griddle and slice the other half into wedges for serving.
Serve immediately while warm and enjoy!
- Don't move the fish around once placed on the griddle.
- Fish is done when it flakes easily and is opaque throughout.
- Refrigerate the leftovers in an airtight container for up to 3 days.
