Blackstone Catfish Fillets is a delicious, healthy, low carb and keto friendly dish that we make often during the summer months. It cooks with ease on the Blackstone but it is also delicious cooked on the gas grill, stovetop in a cast iron skillet or a charcoal grill. We love cooking outside because it keeps the smoking, seafood flavor outdoors.

Ingredients
- Catfish Fillets – We recommend using fresh, quality catfish. Feel free to substitute the catfish with redfish, salmon, cod or tilapia
- Vegetable Oil – You can also use Olive Oil or Avocado Oil which is my preferred oil for griddle cooking
- Butter – We like using unsalted butter with the oil for a creamy flavor to the flavor of the fish
- Lemon Wedges – Fresh Lemon Juice gives the catfish the best flavor

- Paprika – We have even used smoked paprika to add a smoky flavor to the blend of spices.

How to Make Catfish Fillets on the Blackstone
- Step 1 – Preheat Blackstone griddle over medium heat.
Step 2 – In a small bowl or a shallow pan, mix the garlic powder, onion powder, paprika, kosher salt, pepper, and dried thyme until well combined.
Step 3 – Pat the catfish fillets dry with paper towels, then coat each fillet lightly with vegetable oil. Sprinkle the seasoning rub mixture evenly over both sides of the fillets. Shaking off any excess seasoning mixture.
Step 4 – Add the remaining vegetable oil and tablespoon of butter to the griddle surface in an even layer with a long-handled spatula. When the butter has melted and the griddle is hot, place the fillets on the hot grill.
Step 5 – Cook for 4-5 minutes on each side, or until golden brown and the fish flakes easily with a fork and seared to perfection. Cut the lemon in half. Squeeze one half over the fish just before removing it from the griddle and slice the other half into wedges for serving. Serve immediately while warm and enjoy!

- Cooking Catfish – Don’t move the fish around once placed on the griddle. Once you flip the catfish and you have any remaining butter, you can melt on top of the catfish.
- Preparing Catfish – Before placing the catfish on the griddle, pat dry the catfish with paper towels. Lightly oil the catfish and coat both side with the prepared seasoning. This will give the catfish the best crust and flavor.
- Choosing Catfish – For the best results and flavor make sure to choose fresh, high-quality catfish that is firm without a strong fishy smell.
How to Know When Catfish is Done Cooking
You will know that the fish is done when it flakes easily and is opaque throughout. Make sure to cook the catfish on each side until the catfish is fully cooked.
The catfish will be golden brown and ready to serve as soon as it is done cooking. Make sure to not overcook as catfish can become dry very quickly. Stay close to the Blackstone to prevent overcooking.
How to Cook Catfish on Stovetop
If you prefer, you can easily cook this catfish on the stovetop. We recommend cooking it in a Large Cast-Iron Skillet for the best flavor.
- Preheat the cast iron skillet over medium-high heat with canola oil and butter.
- Once the butter has melted and the skillet is hot, place the fresh catfish fillets in the hot skillet.
- Cook the catfish for about 3-4 minutes on each side or until the catfish is golden brown and flakes easily with a fork.
