- 2 1/2 lbs Boneless Skinless Chicken Breasts
- 2 Tbsp Avocado Oil
- 2 Limes Juiced
- 2 Tbsp Fajita Seasoning
- 1 Red Bell Pepper sliced
- 1 Yellow Bell Pepper sliced
- 1 Onion sliced
- 12 Flour Tortillas fajita size
Cut 2½ pounds boneless skinless chicken breasts into approximately 1-inch strips.
Preheat the Blackstone grill over medium high heat (approximately 450 degrees F). Spread 2 tablespoons avocado oil evenly onto the grill.
Place the chicken on one side of the grill. Season it with 2 tablespoons fajita seasoning and toss to coat the chicken evenly.
Spread 1 sliced red bell pepper, 1 sliced yellow bell pepper, and 1 sliced onion onto the grill next to the chicken.
Cook both the chicken and veggies for 6-9 minutes flipping occasionally until the chicken is cooked through and the veggies are tender. Squeeze the juice from 2 limes over the chicken and toss to coat.
Remove both the chicken and the vegetables from the grill to a separate plate.
Place 12 fajita-size flour tortillas on the grill and heat for approximately 30 seconds per side until warmed through.
Assemble the fajitas and they are ready to serve and enjoy!
You can use corn tortillas instead of flour if you prefer.
Refrigerate any leftovers in an airtight container for up to 5 days.
