Ingredients

  • 2 Tablespoons Avocado Oil divided
  • 3 pounds Russet Potatoes sliced thin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Garlic Powder
  • 2 teaspoon Cajun Seasoning
  • 1/2 Medium White Onion cut into ½inch chunks
  • 2 Medium Zucchinis cut into ½ inch chunks
  • 1 Red Bell Pepper cut into ½inch chunks
  • 2 lbs Kielbasa Sausage sliced into approximately 1/2 inch thick slices
  • ½ cup Italian Dressing

Instructions

  • Preheat the Blackstone grill over medium high heat until it reaches approximately 350 degrees F.
  • Spread approximately 1 tablespoon of the oil onto the grill.  Add the potatoes into a single layer and season them with the paprika, garlic powder and cajun seasoning.  Toss to coat the potatoes with the seasoning mixture and the oil.
  • Squirt some water onto the potatoes and cover it with a dome or the lid on the Blackstone grill. Cook the potatoes for 4-5 minutes.  Then toss the potatoes, squirt more water onto the potatoes, cover and cook for 4-5 more minutes until browned and tender.
  • While the potatoes are cooking, add the remaining oil to a separate section of the grill and add the cut veggies and sauté for a few minutes until soft and browned.
  • Add the diced sausage to the grill next to the veggies to start to brown them slightly as well.
  • Once the veggies are soft, drizzle the Italian dressing onto the veggies and toss to coat the veggies with the dressing.  Let cook for a few minutes until the sauce starts to bubble.
  • Then toss the potatoes and sausage into the vegetable mixture to coat all the ingredients with the dressing.
  • Remove from the grill, let rest for a few minutes and then it’s ready to serve and enjoy!
