What is Cowboy Stir Fry?

Cowboy Stir Fry is a griddle meal that consist of a meat of your choice, tons of vegetables and sauteed in a sauce.

The crispy potatoes, tender peppers and cooked sausage makes this the best weeknight meal or to feed a crowd.

Ingredients

Ingredients - Avocado Oil, russet potatoes, paprika, garlic powder, cajun seasoning, white onion, zucchinis, red bell pepper, kielbasa sausage, Italian Dressing
  • Avocado Oil – Use oil of your choice. We recommend using high smoke point oil
  • Russet Potatoes – You can use other types of potatoes such as red potatoes or yellow gold potatoes 
  • Paprika – Substitute with smoked paprika for a smoky flavor
  • Garlic Powder – Feel free to substitute with 1 teaspoon of minced garlic cloves
  • Cajun Seasoning – Gives this stir fry amazing flavor
  • White Onion, Zucchinis, Pepper – Cut the vegetables into ½ inch chunks. We have even added slice jalapeno for added flavor.
  • Kielbasa Sausage – Sliced into approximately ½ inch thick slices

How to Make Cowboy Stir Fry on the Blackstone

  • Step 1 – Preheat the Blackstone grill over medium high heat until it reaches approximately 350 degrees F.

Step 2 – Spread approximately 1 tbsp oil onto the hot zone.  Add the 3 lb russet potatoes into a single layer and season them with the tsp paprika, garlic powder and cajun seasoning. You can even add a tsp salt and a tsp pepper for an easy addition. Toss to coat the potatoes with the seasoning mixture and a little olive oil.

Step 3 – While the potatoes are cooking, add the remaining oil to a separate section of the grill and add the cut veggies and sauté for a few minutes until soft and browned.

Step 4 – Add the diced sausage to the grill next to the veggies to start to brown them slightly as well.

Step 5 – Once the veggies are soft, drizzle the Italian dressing onto the veggies and toss to coat the veggies with the dressing.  Let cook for a few minutes until the sauce starts to bubble.

Step 6 – Then toss the potatoes and sausage into the vegetable mixture to coat all the ingredients with the dressing.

Step 7 – Remove from the grill, let rest for a few minutes and then it’s ready to serve and enjoy! Garnish with a tsp parsley, your favorite hot sauce, kosher salt and pepper when serving.

Expert Tips

  • Cooking Potatoes – Squirt some water onto the potatoes and cover it with a dome or the lid on the Blackstone grill. Cook the potatoes for 4-5 minutes.  Then toss the potatoes, squirt more water onto the potatoes, cover and cook for 4-5 more minutes until browned and tender.  
  • Chopping Vegetables – We recommend chopping the vegetables about the same size ensures that they cook evenly. Use a vegetable chopper for the best results.
  • Prepare Griddle – For the best texture and tender vegetables, we recommend preheating the flat top griddle with oil before adding the ingredients.

Instructions
