The Blackstone’s hot surface gives you chicken bites amazing sear without crowding a skillet. Bite size pieces cook fast, leaving every edge crispy-gold while staying juicy and tender on the inside.

Add a simple garlic-butter glaze and these seasoned chicken bites become crowd-pleasing protein for bowls, pasta, chicken wraps, salads, tacos—or straight off the griddle. These will become a staple recipe anytime you are cooking on the griddle.

Ingredients

  • Boneless Skinless Chicken Breasts – Diced into 1 inch pieces; You can also make with boneless skinless chicken thighs
  • All Purpose Flour – Helps for the seasoning to stick to the chicken
  • Italian Seasoning – Learn How to Make Italian Seasoning Recipe
  • Olive Oil – You can use any oil with a high smoke point instead of the avocado oil in this recipe. Coconut oil, vegetable oil and canola oil all work as well. Use cooking oil of choice.
  • Butter – We used unsalted butter
  • Cloves Garlic – Learn How to Mince Garlic Cloves
  • Chopped Fresh Parsley – Optional, for serving

How to Make Chicken Bites on the Blackstone Griddle

Step 1 – Preheat the Blackstone grill over medium-high heat (approximately 400 degrees F).

Step 2 – Place the diced chicken in a mixing bowl. Top with flour, Italian seasoning, salt and pepper. 

Step 3 – Toss to coat the chicken in the flour and seasoning mixture.  

Step 4 – Spread the avocado oil and 1 Tablespoon Butter onto the Blackstone grill and use a spatula to spread it around.

Step 5 – Place the chicken on the grill on top of the oil and butter and spread it out into a single layer.

Step 6 – Let the chicken cook for about 3 minutes without moving it so that the check gets browned.

Step 7 – Toss the chicken and cook on the other side for 2-3 more minutes until browned.  Dice up the remaining butter and place on top of the chicken on the grill and add in the minced garlic.

Step 8 – Toss to coat the golden brown chicken in the butter and garlic and cook for 1-2 more minutes until the chicken reaches an internal temperature of 165 degrees F.  Remove the chicken from the grill and let it rest for 5 minutes.  Serve topped with the fresh chopped parsley and enjoy!
