Preheat the Blackstone Grill over medium heat (approximately 350 degrees Fahrenheit).
Add the butter to the grill and use a spatula to spread it around.
In a small bowl, whisk together the eggs and set aside.
On one side of the griddle, shred the hash browns into a single layer. Season with salt and pepper. Allow the hash browns to cook until lightly browned (7-10 minutes).
While the hash browns are cooking, spread the ham and onions onto the other side of the griddle. Toss them every few minutes until browned and the onions are tender.
Once the hash browns start to brown, pour the beaten eggs on top of them evenly. Sprinkle 1 1/2 cups of the shredded cheese on top. Then top with the sautéd ham and onions.
Let cook for 3-5 minutes until the eggs are set.
Then use your spatula to cut the mixture in half lengthwise and widthwise to form 4 sections.
Use a spatula to fold each omelet in half so that the eggs, ham and onions are on the inside.
Top with the remaining shredded cheese and allow for the cheese to melt.
Then the omelets are ready to serve and enjoy with your favorite toppings!
