Blackstone Omelette has become a weekend staple at my house. My kids always have friends over, so cooking a large breakfast always makes them happy. The Blackstone Griddle is perfect for this recipe because of the large cooking surface.

You can make this omelette in many different ways. Loaded it with veggies, meats and more for the most important meal of the day.

Ingredients

Ingredients needed for hashbrown omelette - hashbrowns, butter, eggs, cheddar cheese, ham, onion, salt and pepper
  • Shredded Hash Browns (30 ounces – thawed) 
  • Butter
  • Large Eggs
  • Cheddar Cheese (shredded) 
  • Diced Ham 
  • Onion (finely diced) 
  • Salt
  • Pepper

Step by Step Instructions 

  • Step 1– Preheat the Blackstone Grill over medium heat (approximately 350 degrees Fahrenheit).
  • Step 2 – Add the tablespoons of butter to the preheated griddle and use a spatula to spread it around. You can also use olive oil or vegetable oil.
  • Step 3 – In a small bowl, whisk together the eggs and set aside.

Step 4 – On one side of the griddle, shred the hash browns into a single layer.  Season with salt and pepper.  Allow the hash browns to cook until lightly golden brown (7-10 minutes) over medium-high heat.

Step 5 – While the hash browns are cooking, spread the ham and onions onto the other side of the griddle.  Toss them every few minutes until browned and the onions are tender.

Step 6 – Once the hash browns start to brown, pour egg mixture on top of them evenly.  Sprinkle 1 ½ cups of the shredded cheese on top of the hash.  Then top with the sautéed ham and onions. Let cook for 3-5 minutes until the eggs are set.

Step 7 – Then use your spatula to cut the mixture in half lengthwise and widthwise to form 4 sections. Use a spatula to fold each omelet in half so that the eggs, ham and onions are on the inside.  Top with the remaining shredded cheese and allow for the cheese to melt. Serve and enjoy!

Recipe Tips

  • Frozen Hash Browns – Before cooking the hashbrowns, make sure they are thawed. Make sure to allow the hashbrowns to cook before flipping to other side.
