Blackstone Mexican Street Corn

  • Preheat a Blackstone grill over medium high heat (approximately 400 degrees Fahrenheit).
  • Spread the oil out onto the grill with a spatula.
  • Microwave the corn for 1-3 minutes so that the frozen corn does not damage the grill.
  • Then spread the corn out onto the griddle.  Season the corn with salt and pepper. Cook for a few minutes, stirring frequently, until the corn is warmed and browned.
  • Then make a circle in the center of the pile of corn and pour the mayonnaise into the center of the corn.  Then mix the mayonnaise into the corn.
  • Top the corn with the lime juice, chopped cilantro and sprinkle the cheese on top. Stir in the cheese.
  • Remove from the grill.  Top with the Tajin when serving and enjoy!

Notes

You can use any oil with a high smoke point.  Avocado oil, coconut oil, canola oil and vegetable oil all are great options.  
Refrigerate the leftovers in an airtight container for up to 5 days.
