Preheat a Blackstone grill over medium high heat (approximately 400 degrees Fahrenheit).
Spread the oil out onto the grill with a spatula.
Microwave the corn for 1-3 minutes so that the frozen corn does not damage the grill.
Then spread the corn out onto the griddle. Season the corn with salt and pepper. Cook for a few minutes, stirring frequently, until the corn is warmed and browned.
Then make a circle in the center of the pile of corn and pour the mayonnaise into the center of the corn. Then mix the mayonnaise into the corn.
Top the corn with the lime juice, chopped cilantro and sprinkle the cheese on top. Stir in the cheese.
Remove from the grill. Top with the Tajin when serving and enjoy!
You can use any oil with a high smoke point. Avocado oil, coconut oil, canola oil and vegetable oil all are great options.
Refrigerate the leftovers in an airtight container for up to 5 days.
