Mexican Street Corn is a family favorite Grilled Mexican Recipes. The ingredients are simple and you can use fresh corn or frozen corn. It is cream, delicious and can be paired with many different meals.

What is Mexican Street Corn?

You may know these recipe as Elotes. Which is a corn on the cob that is charred on the grill then a spicy rub is placed on the cook corn. We made this recipe easy by using frozen corn but the same Mexican seasoning.

How to Make Mexican Street Corn on Blackstone Griddle

  • Step 1 – Heat Griddle – Preheat a Blackstone grill over medium high heat (approximately 400 degrees Fahrenheit). 
  • Step 2 – Spread oil on Grill – Spread the oil out onto the grill with a spatula. 
  • Step 3 – Microwave Corn – Microwave the corn for 1-3 minutes so that the frozen corn does not damage the grill.

Step 4 – Spread Corn on Griddle – Then spread the corn out onto the griddle.  Season the corn with salt and pepper. Cook for a few minutes, stirring frequently, until the corn is warmed and browned.

Step 5 – Top with Mayo – Then make a circle in the center of the pile of corn and pour the mayonnaise into the center of the corn.  Then mix the mayonnaise into the corn.

Step 6 – Add Lime Juice and Cheese – Top the corn with the lime juice and sprinkle the cheese on top. Stir in the cheese.

Step 7 – Serve and Enjoy – Remove from the grill.  Top with the Tajin when serving and fresh cilantro and enjoy.

Recipe Tips

  • Oil – You can use any oil with a high smoke point.  Avocado oil, coconut oil, canola oil and vegetable oil all are great options.  
  • Seasoning – Feel free to change the seasoning. You can use sour cream instead of mayonnaise. Chili Powder would flavor and spice to the mixture.

Can you use Corn on the Cob instead of Frozen?

Yes, if you have leftover corn on the cob, remove it from the husk and place it on the grill. Cook the street corn as directed with the same seasoning. Feel free to also use canned corn.
