These Corn Fritters are loaded with flavor. Cooking on the Blackstone Griddle allows me to cook several at once because of the large cooking surface. This Blackstone Recipe is great to use leftover corn for a delicious side dish or appetizer.

If you have made Grilled Corn on the Cob in Husk, Blackstone Corn on the Cob or Smoked Corn on the Cob cut the corn off the cob and make these street corn fritters.

What are Street Corn Fritters?

Street Corn Fritters combines corn, flour, cornmeal and simple seasoning and made into patties. These full of flavor fritters are cooked golden brown on the griddle. This is one of our favorite blackstone side dishes.

These are served as a side dishes with your traditional Mexican recipes. But can be served with any type of seafood or other Blackstone recipes.

Variations Ideas

  • Corn – Feel free to use frozen corn, corn on the cob or canned corn to make these fritters.
  • Cotija Cheese – If you are unable to find cotija cheese you can substitute for queso fresco. Parmesan Cheese is also a great substitute.
  • Seasoning – Feel free to change the seasoning. A great substitute would be taco seasoning.
  • Dipping Sauce – If you need a substitute for mayonnaise, you can use sour cream. You can also use half sour cream and half mayonnaise.

How to Make Street Corn Fritters on the Blackstone Griddle

  • Step 1 – Heat Griddle – Preheat the Blackstone grill over medium high heat (approximately 350-400 degrees F). 
  • Step 2 – Mix Ingredients – In a large bowl, stir together the corn, cornmeal, flour, baking powder, seasonings, chopped cilantro and cortina cheese. Then add in chili powder and garlic powder.

  • Step 3 – Stir in Wet Ingredients – Stir in the lime juice, eggs and milk until the batter is well combined. 
Mix in the lime juice, eggs and milk into the corn mixture
  • Step 4 – Oil the Griddle – Spread the vegetable oil out onto the Blackstone grill with a spatula. 
  • Step 5 – Scoop Mixture onto Griddle – Scoop the corn mixture onto the grill using a ¼ cup measuring cup. Gently press the mixture down to flatten out the patties.

  • Step 6 – Cook Patties – Cook each of the patties for 3-4 minutes until the fritter is browned.  Flip and cook the other side for 3-4 more minutes. 
  • Step 7 – Cook – Continue until all the fritters are cooked.

  • Step 8 – Combine Dipping Ingredients – In a small bowl, mix together the dipping sauce ingredients.

  • Step 9 – Serve and Enjoy – Serve with the corn fritters topped with more cilantro, cortina cheese and the dipping sauce.  Enjoy! 

Expert Tips

  • Cook on Stove Top – These Street Corn Fritters can easily be cooked on skillet over medium heat.
  • Heat Griddle – Make sure to heat griddle and oil to cook the corn fritters. This allows the fritters to cook with a crispy texture and prevents them from sticking.
  • Resting Fritters – Once you have cook the fritters, remove them from the griddle and place on a paper towel lined baking sheet. You can also place on a wire rack to keep them extra crispy.
  • Dipping Sauce – We recommend making the dipping sauce to serve with the corn fritters. We even serve it on top for added flavor.
  • Filling Measuring Cup – Fill the measuring cup with the corn fritters batter and level off the top. This allows for evenly corn fritters to cook on the griddle.
  • Press Fritters – When the fritter batter is poured onto the hot griddle, gently press with a spatula.

The Cotija Cheese adds so much flavor to these Fritters. This cow’s milk cheese originates in Mexico. It has a similar texture as feta cheese. It is often found in a small wheel and can be sold crumbled.
