Ingredients

  • 12 Eggs
  • 3 Tbsp Milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 Tbsp Oil Butter or Bacon Grease (do not use olive oil)

Instructions

  • Whisk together the eggs, milk, salt and pepper in a large mixing bowl.
  • Heat the Blackstone griddle over medium high heat (to approximately 350-375 degrees F). Oil the griddle with oil, butter or bacon grease so that the eggs does not stick.
  • Pour the egg mixture onto the griddle. As the eggs began to set use a large spatula to push the eggs to the center of the griddle to make the egg curdles. Continue this process until all the eggs are cooked but still appear slightly wet so that they do not dry out.
  • Remove the eggs immediately from the heat and then they are ready to enjoy!

Notes

It's best to use an oil with a high smoke point on the griddle so that it does not burn. We find that avocado oil, coconut oil or butter work best on a griddle.
