Blackstone Shrimp Tacos

Ingredients

For the Marinade:

  • 1 lb Shrimp peeled and deveined
  • 1 Tbsp Taco Seasoning
  • 1 Lime juiced
  • 1 Tbsp Vegetable OIl
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

For the Tacos:

  • 1 Tbsp Vegetable Oil
  • 12 Street Size Corn Tortillas
  • 1 cup Red Cabbage shredded
  • 1/2 cup Cojita Cheese (optional)

Instructions

  • In a large bowl, toss 1 pound peeled and deveined shrimp with 1 tablespoon taco seasoning, the juice from 1 lime, 1 tablespoon vegetable oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
  • Preheat the Blackstone grill over medium high heat (approximately 400 degrees F).
  • Add 1 tablespoon vegetable oil to the griddle. Add the shrimp and tortillas in a single layer on the grill.
  • Cook the shrimp and the tortillas for 2-3 minutes per side until the tortillas are browned slightly and the shrimp is cooked through.
  • Then it's time to assemble the tacos. Place cabbage on the bottom of each tortilla. Top it with the shrimp and cheese (if using). Enjoy!

Notes

This recipe can be made with raw or pre-cooked shrimp. If you use pre-cook shrimp, cook the shrimp for 1-2 minutes per side to heat them through.
These tacos are best served fresh but you can refrigerate the leftovers in an airtight container for up to 3 days.
