Preheat the Blackstone Grill over high heat (approximately 400 degrees F).
Drizzle 2 tablespoons avocado oil on the grill surface. Place 4 peeled and diced sweet potatoes on the oil and season with ½ teaspoon salt and ½ teaspoon pepper.
Sauté the sweet potatoes for 12-15 minutes covered and toss approximately every 2-3 minutes.
Once the sweet potatoes are fork tender, add 2 tablespoons butter on top of the potatoes. Toss the sweet potatoes until the butter is completely melted and evenly coats the potatoes. Cover for 1-2 more minutes.
Remove the potatoes from the grill, serve immediately while warm and enjoy!

Refrigerate any leftover sweet potatoes in an airtight container for up to 5 days.
